This beer takes inspiration from the traditional Mole sauces of Mexico which are rich in depth and flavour. The Pasilla chillies known for their rich, liquorice taste may not be big on heat but they are big on flavour. We balanced them over an aromatic spice mix of cinnamon quills, cassia bark and black cardamom.Expect soft, velvety hints of cacao, liquorice, delicate smoke, sweet cinnamon and warming cardamom.
