This is our first public barrel aged bottle release. Sap & Oak is a blend of Imperial Stouts aged 12 months in Bourbon barrels and 14 months in wheat whiskey barrels. Knowing that we were going to back sweeten with real Vermont maple syrup we wanted to select barrel aged beer more on the drier side so that the final product would not be too sweet. In addition to the maple syrup we added Madagascar vanilla caviar which is the stuff on the inside of the vanilla pod. After all the blending and treatments the beer ended up nice and balanced, which lends to more drinkability. Up front you get the oak character from the wood. Then after you swallow some of the maple stays behind coating your palate. The vanilla is present but isn't dominating.
