This Lambic-inspired beer was brewed through traditional methods and contains raw wheat, aged hops, and fresh raspberries. It was fermented with a blend of organisms to best emulate the rustic characteristics of a traditional Belgian Lambic. The young beer was aged in French oak casks with fresh raspberries for 1 year which allowed the development of a soft oak presence, dry expressive yeast quality and tart bright acidity from the fermented fruit and bacteria.
